His intimate Los Angeles bar, <a href=\"https:\/\/almasonvirgil.com\" target=\"_blank\" rel=\"noreferrer noopener\">Alma\u2019s Cider &amp; Beer<\/a>, which opened in 2021, is a 558-square-foot jewel box bathed in three shades of blue, decorated with quirky dioramas and a chandelier evoking flying saucers. What you won\u2019t find: farm-core flourishes like plaid tablecloths or faux apples in splintery crates.<\/p>\n<p>\u201cFolks come in for the vibe and the ambiance,\u201d says Briante, the co-owner, adding that Alma\u2019s is a popular date spot. \u201cSometimes people don\u2019t know that we\u2019re a cider bar.\u201d<\/p>\n<p>Alma\u2019s is one of America\u2019s most well-curated cider bars with more than 100 selections, from a German cider co-fermented with quince to Spain\u2019s enliveningly acidic sidra. \u201cThat\u2019s always what I give as a first taste,\u201d Briante says of the cider that\u2019s tart, funky, and disarming for drinkers accustomed to sweet commodity ciders. \u201cI want to stop them in their tracks. And then it opens a conversation.\u201d A person-by-person palate shift helps Alma\u2019s cultivate a customer base crossing over from sour ales or natural wines. Alma\u2019s helps drinkers \u201cdiscover what cider can be,\u201d Briante says. \u201cWe get to be a champion for a beverage that doesn\u2019t always get a lot of love.\u201d<\/p>\n<figure Cider was omnipresent in colonial America, where apple trees provided abundant sources of fermentable sugars. Its primacy ebbed in the mid-19th century as German immigrants settled in America\u2019s surging urban centers and brewed lagers. The temperance push and Prohibition sparked the destruction and abandonment of orchards, relegating cider to sweet apple juice suited for lunchboxes. \u201cIt was pigeonholed as a drink for kids,\u201d says Alex Doman, the co-founder and CEO of <a href=\"https:\/\/avecdrinks.com\" target=\"_blank\" rel=\"noreferrer noopener\">AVEC Drinks<\/a>, which makes an alcohol-free cider flavored with cardamom.<\/p>\n<blockquote class=\"wp-block-quote is-style-default is-layout-flow wp-block-quote-is-layout-flow\">\n<p>With hard seltzer decelerating, \u201cpeople are looking for bigger, bolder products.\u201d\u2014Lee Larsen, 2 Towns Ciderhouse<\/p>\n<\/blockquote>\n<p>A decade ago, hard cider seemed unstoppable. Its gluten-free quality made it an appealing beer alternative, led by Boston Beer Company\u2019s <a href=\"https:\/\/www.angryorchard.com\" target=\"_blank\" rel=\"noreferrer noopener\">Angry Orchard<\/a>. Ros\u00e9-inspired ciders were all the rage. But along came hard seltzer, also gluten-free, delivering 100-calorie cans boasting black cherry \u201cnatural flavors.\u201d During hard seltzer\u2019s late 2010s heyday, \u201cpeople got used to blander products,\u201d says Lee Larsen, CEO and co-founder of <a href=\"https:\/\/2townsciderhouse.com\" target=\"_blank\" rel=\"noreferrer noopener\">2 Towns Ciderhouse<\/a>. Cider\u2019s national star waned as Molson Coors eliminated Crispin and Smith &amp; Forge, and Anheuser-Busch sold Virtue Cider back to its founder. With hard seltzer decelerating, \u201cpeople are looking for bigger, bolder products,\u201d Larsen says.<\/p>\n<p>Cideries are meeting this moment by showcasing fermented apples\u2019 malleable appeal. Cider can be no ABV or high ABV, channeling amari or Latin American aguas frescas. Breweries are producing hard cider to create more welcoming taprooms, while cideries are recasting themselves as fruit-fermentation specialists combatting canned cocktails on store shelves. Fast-growing regional cideries now account for the majority of cider sales, signifying a shift to taste with a sense of place. \u201cConsumers want a flavorful local beverage,\u201d says Michelle McGrath, the CEO of the <a href=\"https:\/\/ciderassociation.org\" target=\"_blank\" rel=\"noreferrer noopener\">American Cider Association<\/a>.<\/p>\n<p>Craft beer distorts the concept of locality. Breweries largely acquire grains, hops, and yeast strains from far and wide. A brewery\u2019s top local trait might be its address. Cideries can easily root in regions like New York state, where Ryan James Burk is shrinking his cider-making scope.<\/p>\n<p>He started at Angry Orchard in 2015 and starred in TV commercials for the country\u2019s largest cidery. But Burk also focused on idiosyncratic ciders drawn from the company\u2019s historic Walden, New York, orchard. The chasm separating Angry Orchard\u2019s scale and Burk\u2019s exacting small-batch cider was tough to bridge. \u201cI would bring that cider into restaurants. And it was at least as good as, if not better than, any other cider available,\u201d Burk says. \u201cAnd they\u2019d be like, \u2018Yeah, but it says Angry Orchard on it. Thanks, but no thanks.\u2019\u201d<\/p>\n<p>He departed Angry Orchard in 2022 and soon began fermenting apples for <a href=\"https:\/\/occamcider.com\" target=\"_blank\" rel=\"noreferrer noopener\">Occam Cider<\/a>. Named after the principle positing that simple explanations are best, Burk\u2019s project with his wife, Eva Deitch, centers on New York state ciders produced alongside Lake Ontario and the Finger Lakes. The itinerant model\u2014Occam has no permanent home\u2014will follow a direct-to-consumer club model with no more than 800 members, who should receive initial shipments this fall or winter. \u201cThis is very much about what\u2019s happening in New York in a given season,\u201d says Burk. (As Occam evolves, Burk will produce cider in other states and abroad.)<\/p>\n<p>Farms on Michigan\u2019s fertile western shores grow cherries, grapes, strawberries, and apples in the state\u2019s temperate fruit belt. That bounty partly inspired Eeva and Trace Redmond, who are married and worked at <a href=\"https:\/\/highlandbrewing.com\" target=\"_blank\" rel=\"noreferrer noopener\">Highland Brewing<\/a> in Asheville, North Carolina, to return to Eeva\u2019s northern Michigan hometown in 2021. This March, they opened Petoskey\u2019s <a href=\"https:\/\/elderpiperbeer.com\" target=\"_blank\" rel=\"noreferrer noopener\">Elder Piper Beer + Cider<\/a>, using apples from Eeva\u2019s family orchard \u201cthat\u2019s gone back to the forest,\u201d says Trace, who calls the trees \u201cferal.\u201d The couple pluck and press the family\u2019s once-forgotten apples\u2014no one\u2019s sure of exact varieties\u2014and roll with every agricultural punch. This year\u2019s pressing has a distinct floral, tropical character with notable sweetness that can be triggered by an imbalance of nitrogen to calcium in the ground. Anagrarian narrative is an additional ingredient. \u201cPeople are excited about the stories,\u201d Eeva says.<\/p>\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped Soham Bhatt and Jake Mazar founded <a href=\"https:\/\/www.artifactcider.com\" target=\"_blank\" rel=\"noreferrer noopener\">Artifact Cider Project<\/a>, now in Florence, Massachusetts, in 2014 to support Northeast orchards and elevate varieties like the McIntosh, a staple supermarket apple. Bhatt, who is Indian American, now expands his cider-making lens to South Asia. He collaborated with spice company<a href=\"https:\/\/www.diasporaco.com\" target=\"_blank\" rel=\"noreferrer noopener\"> Diaspora Co.<\/a> on a guava cider sprinkled with tangy chaat masala, then partnered with chef Chintan Pandya of New York City\u2019s <a href=\"https:\/\/unapologeticfoods.nyc\" target=\"_blank\" rel=\"noreferrer noopener\">Unapologetic Foods<\/a> group on a hopped cider with mango dubbed Jalsa (Hindi for \u201ccelebration\u201d). Made with Alphonso mangos native to Bhatt and Pandya\u2019s shared home region of Gujarat, India, the cider has added hops that replicate biting into bitter mango skin. \u201cTerroir isn\u2019t just this Eurocentric concept,\u201d Bhatt says.<\/p>\n<p>In 2017, Jos\u00e9 and Shani Gonzalez, who are second-generation Mexican immigrants, blended the concept of aguas frescas, refreshing drinks made by mixing fruit with water and sugar, with Pacific Northwest apples to create <a href=\"https:\/\/www.instagram.com\/lafamiliacider\/?hl=en\" target=\"_blank\" rel=\"noreferrer noopener\">La Familia Cider<\/a>. The Salem, Oregon, company\u2019s ciders contain hibiscus flowers and guava and are sold in taquerias and Mexican restaurants that might not normally carry cider. \u201cOur biggest opportunity is having our cans on a menu alongside Corona and Modelo,\u201d Jos\u00e9 says.<\/p>\n<p>La Familia underlines the connection between its ciders and culinary Mexico at its Salem cider house that opened in 2020 and shares space with <a href=\"https:\/\/azulstacohouse.com\" target=\"_blank\" rel=\"noreferrer noopener\">Azuls Taco House<\/a>. This summer, La Familia will open a second taproom, in Portland, serving quesadillas and nachos, ideal ballast for its tamarind cider. \u201cOur die-hard customers come in with a love for these Mexican flavors,\u201d he says, but \u201cthey\u2019re just enjoying them in a cider format.\u201d<\/p>\n<p>Big flavor is a selling point in beverage alcohol, from potent Buzz Ballz cocktails like <a href=\"https:\/\/www.buzzballz.com\/products\/sour-apple-chiller\/\" target=\"_blank\" rel=\"noreferrer noopener\">Sour Apple Chiller<\/a> to New Belgium\u2019s Voodoo Ranger line of imperial IPAs, including punch-like <a href=\"https:\/\/www.newbelgium.com\/beer\/voodoo-ranger-fruit-force\/\" target=\"_blank\" rel=\"noreferrer noopener\">Fruit Force<\/a> and <a href=\"https:\/\/www.newbelgium.com\/beer\/voodoo-ranger-juice-force\/\" target=\"_blank\" rel=\"noreferrer noopener\">Juice Force<\/a>. Know what else is fruity and juicy? Apples.<\/p>\n<p>\u201cAll this innovation is mimicking what cider does naturally,\u201d says Andrew Blake, who in 2013 founded <a href=\"https:\/\/www.blakeshardcider.com\" target=\"_blank\" rel=\"noreferrer noopener\">Blake\u2019s Hard Cider<\/a> on the apple-producing Armada, Michigan, farmstead that his family started operating in 1946. In the early 2010s, craft brewers championed an anything-goes ethos. Blake also bucked cider tradition by blending apples with mangos and habaneros, turning cider into a vehicle for delivering memorable flavor. In the last two years, Blake\u2019s merged with Texas-based Austin East ciders and Avid Cider in Bend, Oregon. The combined cideries, collectively known as <a href=\"https:\/\/blakesbevco.com\" target=\"_blank\" rel=\"noreferrer noopener\">Blake\u2019s Beverage Company<\/a>, can target different occasions and drinkers. Austin East ciders recently released <a href=\"https:\/\/austineastciders.com\/products\/rico-tepache\" target=\"_blank\" rel=\"noreferrer noopener\">Rico Tepache<\/a>, a take on Mexico\u2019s traditional pineapple ferment, while Avid Cider debuted the Tuesday Cocktail Club apple-wine cocktails in flavors like <a href=\"https:\/\/tuesdaycocktails.com\/mango-margarita\/\" target=\"_blank\" rel=\"noreferrer noopener\">Mango Margarita<\/a>. \u201cWe can expand what it means to ferment with fruit,\u201d says Blake, the CEO.<\/p>\n<p>Since starting in 2010, 2 Towns Ciderhouse has evolved into a beverage company producing mead and hard tea and seltzer, plus seltzers and canned and bottled cocktails built around strong apple wine. \u201cPeople aren\u2019t beer drinkers, cider drinkers, wine drinkers, or spirit drinkers,\u201d says co-founder Larsen.\u201cThey\u2019re beverage-alcohol drinkers.\u201d<\/p>\n<p>That increasingly means high-alcohol everything. Within brewing, the \u201cimperial\u201d adjective describes a brawnier, boozier beer, often an IPA or stout. In 2010, 2 Towns petitioned the federal government to call its 10.5 percent ABV <a href=\"https:\/\/2townsciderhouse.com\/cider\/the-bad-apple\/\" target=\"_blank\" rel=\"noreferrer noopener\">Bad Apple<\/a> an imperial cider. \u201cWe saw it as a way to bring a bold, complex product to the market,\u201d Larsen says. The cidery spent four years lobbying before the government permitted the descriptor, a legal slog well spent. Today, the imperial category is cider\u2019s biggest driver, and 2 Towns\u2019 <a href=\"https:\/\/2townsciderhouse.com\/cider\/cosmic-crisp\/\" target=\"_blank\" rel=\"noreferrer noopener\">Cosmic Crisp<\/a> imperial cider family accounts for some 50 percent of company sales.<\/p>\n<p>At convenience stores, 19.2-ounce cans of strong beers and cocktail-inspired flavored malt beverages fill coolers. Imperial ciders would slot nicely next to juicy IPAs. But cider above 7 percent ABV can\u2019t legally be packaged in 16- or 19.2-ounce cans and shipped outside a cidery\u2019s home state. \u201cIt\u2019s been really tough to sit on the sidelines,\u201d says Colin Schilling, the CEO and co-founder of Seattle\u2019s <a href=\"https:\/\/schillingcider.com\" target=\"_blank\" rel=\"noreferrer noopener\">Schilling Cider<\/a>, which makes the Excelsior line of imperial ciders. To test the waters, Schilling secured an exemption that lets it sell 19.2-ounce cans of imperial cider in its home state. And early returns have been encouraging. This year, the government is expected to permit imperial ciders in 19.2-ounce cans, shipped anywhere. When the moment arrives, \u201cwe\u2019re very ready,\u201d he says.<\/p>\n<p>The opposite end of the ABV spectrum is nonalcoholic cider, a saturated sector. \u201cThe joke in cider is, \u2018What is dealcoholized hard cider? It\u2019s juice,\u2019\u201d Schilling says. The company instead mixed cherry and apple juices with apple cider vinegar to create the tangy, enlivening <a href=\"https:\/\/schillingcider.com\/products\/ground-control-0-0\/\" target=\"_blank\" rel=\"noreferrer noopener\">Ground Control<\/a>, a riff on the shrub cocktail. \u201cIt\u2019s an authentic throughline back to what we do,\u201d Schilling says.<\/p>\n<p>Many breweries create nonalcoholic versions of well-known beers, be it <a href=\"https:\/\/www.heineken.com\/us\/en\/our-beers\/heineken-0-0\" target=\"_blank\" rel=\"noreferrer noopener\">Heineken 0.0<\/a> or <a href=\"https:\/\/deschutesbrewery.com\/products\/black-butte-non-alcoholic\" target=\"_blank\" rel=\"noreferrer noopener\">Black Butte Non-Alcoholic<\/a> from Deschutes Brewery. <a href=\"https:\/\/drinkgoldenstate.com\" target=\"_blank\" rel=\"noreferrer noopener\">Golden State Cider<\/a> transformed its flagship cider, <a href=\"https:\/\/drinkgoldenstate.com\/collections\/ciders\/products\/mighty-dry?variant=47866192232760\" target=\"_blank\" rel=\"noreferrer noopener\">Mighty Dry<\/a>, into <a href=\"https:\/\/drinkgoldenstate.com\/collections\/ciders\/products\/dry-mighty?variant=47990657646904\" target=\"_blank\" rel=\"noreferrer noopener\">Dry &amp; Mighty<\/a>. The cidery first ferments pressed West Coast apples with Champagne yeast, then sends the cider to another facility to extract alcohol before adding balancing apple juice. \u201cIt needed to be a hard cider experience,\u201d says Chris Lacey, the CEO of the Sebastopol, California, cidery. Golden State released Dry &amp; Mighty last March, and initially \u201cpeople had a hard time grasping what we were doing,\u201d Lacey says. Customers and stores like Total Wine have caught on, but where do you shelve NA cider? \u201cWe want to live in the craft beer NA section.\u201d<\/p>\n<blockquote class=\"wp-block-quote is-style-default is-layout-flow wp-block-quote-is-layout-flow\">\n<p>\u201cWe viewed the brewery as the anchor that gets people in, and then we can educate people on what cider is.\u201d\u2014Benny Farber, Benny Boy Brewing<\/p>\n<\/blockquote>\n<p>Aligning beer with cider can encourage trial. Husband and wife Benny Farber and Chelsey Rosetter conceived <a href=\"https:\/\/imbibemagazine.com\/inside-look-benny-boy-brewing-los-angeles\/\" target=\"_blank\" rel=\"noreferrer noopener\">Benny Boy Brewing<\/a> as Los Angeles\u2019 first brewery and cidery. The couple opened Benny Boy in 2022 with Belgian-inspired beers and bone-dry ciders fermented from California Newtown Pippin apples. \u201cWe viewed the brewery as the anchor that gets people in, and then we can educate people on what cider is,\u201d Farber says.<\/p>\n<p>Benny Boy produces multiple cider entry points flavored with elderflowers, chai spices, or watermelon juice, a summertime bestseller. Farber also collaborates with <a href=\"https:\/\/paliwineco.com\" target=\"_blank\" rel=\"noreferrer noopener\">Pali Wine Co.<\/a> on co-ferments like Orchard Orange, a sparkling ringer for orange wine made by aging wild-fermented Gravenstein apples on Pinot Grigio grape skins. \u201cWe also want wine drinkers to come and enjoy themselves,\u201d Farber says. The brewery-cidery connection will deepen next summer when Farber plants eight apple trees outside Benny Boy on a grassy stretch overlooking Interstate 5. In the metropolis, \u201cplenty of people have not ever encountered an apple tree in their lives,\u201d Farber says of the freeway orchard.<\/p>\n<figure class=\"wp-block-gallery has-nested-images fermented apples, serving as president of Seattle Cider and an Angry Orchard brand strategist before founding <a href=\"https:\/\/www.yondercider.com\" target=\"_blank\" rel=\"noreferrer noopener\">Yonder Cider<\/a> in 2020. Her Wenatchee, Washington, cidery runs Pacific Northwest apples through a prism of cocktails, wine, and spirits to create ciders like the Negroni-based Cashmere and vermouth-inspired Mazama. \u201cI can pull more people into the category by talking about something they relate to,\u201d Braam says.<\/p>\n<p>Another conversion tool is Yonder\u2019s Seattle taproom co-located with <a href=\"https:\/\/balebreaker.com\" target=\"_blank\" rel=\"noreferrer noopener\">Bale Breaker Brewing Company<\/a>. The shared tap list features Bale Breaker\u2019s IPAs alongside Yonder\u2019s ciders, and customers regularly order mixed flights, introducing cider to an audience that might overlook a cider-only taproom. \u201cI thought they would sell more beer and we would sell less cider,\u201d Braam says.<\/p>\n<p>The revenue split has been closer to 50-50, and Seattle\u2019s <a href=\"https:\/\/www.stoupbrewing.com\" target=\"_blank\" rel=\"noreferrer noopener\">Stoup<\/a> and <a href=\"https:\/\/www.oldstove.com\" target=\"_blank\" rel=\"noreferrer noopener\">Old Stove<\/a> breweries also stock Yonder\u2019s ciders. \u201cBreweries are some of our biggest accounts,\u201d Braam says.<\/p>\n<p>One of Braam\u2019s biggest headaches is bubbles, or lack thereof. The federal government\u2019s so-called \u201cbubble tax\u201d levies highly sparkling ciders with duties of up to $3.40 per gallon. Carbonated grape wines (below 8.5 percent) pay $1.07 per gallon, while beer, canned cocktails, and hard seltzers aren\u2019t taxed on carbonation. Many cideries opt for less effervescence to save money. \u201cOur ciders have less carbonation than every other beverage, and sometimes people question whether they\u2019re flat because of that,\u201d Braam says. \u201cPeople are just used to more bubbles. And I can\u2019t explain to everyone why Yonder cider isn\u2019t as carbonated.\u201d In January, congressional representatives introduced the Bubble Tax Modernization Act of 2024 to lower the tax, but governmental gears are slow to turn.<\/p>\n<p>Another pressing concern is climate. Erratic weather wreaks havoc on harvests, challenging cidermakers that grow apples. <a href=\"https:\/\/www.brooklynciderhouse.com\" target=\"_blank\" rel=\"noreferrer noopener\">Brooklyn Cider House<\/a>, based at Twin Star Orchards in New Paltz, New York, tends to more than 50 acres of apple trees that supply ciders like the Basque-style Raw. \u201cWe lost more than half of our crop last year because of spring frost,\u201d says co-founder and head cider maker Peter Yi. Wineries also contend with cold snaps, but they might hire helicopters to recirculate a vineyard\u2019s frosty air. Wine\u2019s higher pricepoints justify added expense. \u201cPeople just expect to pay less for cider,\u201d Yi says.<\/p>\n<blockquote class=\"wp-block-quote is-style-default is-layout-flow wp-block-quote-is-layout-flow\">\n<p>The ciders are presented like fine wine, \u201cbut consumers still struggle to see it that way.\u201d\u2014Lee Briante, Alma\u2019s Cider &amp; Beer<\/p>\n<\/blockquote>\n<p>The most customers can spend is about $35-$40 on a bottle, estimates Occam Cider\u2019s Burk. \u201cThere\u2019s really no high end in cider.\u201d The package size can also limit adoption. While large-format bottles have fallen out of favor in beer, many cideries favor wine\u2019s 750-milliliter bottles. The ciders are presented like fine wine, \u201cbut consumers still struggle to see it that way,\u201d says Briante of Alma\u2019s. Revamping perceptions can be incremental. When Larsen started 2 Towns nearly 15 years ago, customers asked him how he got his grapes to taste like apples, or \u201cthey tried to give it to their children,\u201d he says. \u201cAnd we\u2019re like, \u2018No, no, no. There\u2019s alcohol in that.\u2019 Consumers have gotten much more educated.\u201d<\/p>\n<p>American hard cider is rooted in history and untethered from tradition, allowing cider makers to plant fresh paths. More than 7,000 apple varieties are grown across all 50 states, according to the US Apple Association. Some are for eating, and others are best fermented\u2014boundless possibilities that can be served any which way. Cider\u2019s new rules are being written in real time.
